Tips: 8 glasses or 1 liter of water should drink daily for cleaning the body from defects.
 

Al-lahoh Al-sana'ani

Corn flour

Tips: Al-lohoh Al-Sana'ani is a main meal at lunch in Sana'a city and its suburbs.
 

Al-Break

 
   
   
Prepared:

The dough:

  Spices (Cumin + Black pepper)

Tips: Garlic advantages are the Garlic is a good solvent to harmful cholesterol which is in the blood, balances the blood pressure and kills the worms, parasites and  bad bacteria and activated of digestive system.
 

Khobez Tawa

1 cup Ghee
  Water
A pinch Salt
1 Tbsp Ana seeds

Tips: Cauliflower is useful for diabetes patients.
 

Hakak

 
   
   
Prepared:    
  For 4 persons  
     
ingredients:

Eggs

3 tbsp Milk powder
1 cup Sugar
A pinch Salt
2 tsp Baking powder
1/2 tsp Yeast
2 cups Water
4 cups White flour
       
Method:    
   
   
Tips: For storage the flour is to keep it in the kitchen in a cold and dry place, put it in a sealed jar and the flour can be stored for six months.
 

Alkobana

 
   
   
Prepared:    
  For 4 persons  
     
ingredients:    
 
2 cups

Corn flour

1 cup Hot water
2 Eggs
A pinch Salt
1/2 tbsp Yeast
1 tbsp Ghee or oil
1 tsp Ana seeds
       
Method:    
 

Mix all ingredients together until become a soft paste and then cover the tray with a little of Oil and pour the paste into the tray and put the beaten yolk and little of Ghee or Oil and Ana seeds on the face of the paste and put it in the oven and served hot.

Tips: You should keep fresh yeast inside a nylon bag .
 

Almaloj

 
   
   
Prepared:    
  For 3 persons  
     
ingredients:    
 
2 cups

milled wheat

1 cup Flour
1/2 tsp Yeast
A pinch Salt
  Water
1/2 tbsp Holba
       
Method:    
 

- نحضر إناء للعجن ونضع الطحين والدقيق والملح والخميرة ونخلطها مع بعضها ثم نضيف الماء الدافئ ونعجن إلى أن تكون العجينة خفيفة جداً ومتماسكة بينها البين وتترك إلى حين يرتفع العجين.

   
 

- يوقد التنور المعد لخبز العجينة ثم نحضر الحلبة بعد أن تكون قد نقعناها في الماء وتخلط بواسطة اليد لمدة دقيقتين حتى تصبح شبه رغوة بعد ذلك تكور العجينة إلى دوائر متوسطة وتضرب باليد حتى تصبح على شكل دائرة كبيرة ثم تخبز في التنور (تلصق على جدار التنور) ونطلي وجه الخبز بالحلبة ثم ننتظرها إلى أن يصبح لونها أحمر. ونخرجها من التنور وتؤكل.

   
Tips: Put dry yeast into closed metal can and keep it in a cool place.
 

Shoa'af

 
   
   
Prepared:    
  For 6 persons  
     
ingredients:

Eggs

1 cup Milk
1/2 cup Oil
2 tsp Ghee (Optional)
1/2 tsp Yeast
1 tsp Baking powder
1 cup Sugar
3 cups Flour
1/2 cup Water
       
Method:    
  - Add all ingredients except the flour into the blender and blend for 5 minutes.
  - Add the flour into the blender with the ingredients and blend for 2 minutes.
 

- Heat the pan with little bit of oil on the face then add a small quantity of the mixture (use a cup or deep spoon to scoop the mixture and pour it into the pan) then move the pan in circular motion to apply a thin circular layer of the mixture.

  - After first side of Shoa'af is done, turn it to other side.
  - Serve the shoa'af with tea or coffee or sweetsop.
Tips: The reducing of use animal ghee and replace it with vegetarian ghee because it's more healthy and contains no cholesterol
 

Ka'ak Mor

 
   
   
Prepared:    
  For 6 persons  
     
ingredients:

Eggs

6 cups Flour
2 cups Ghee
1 cup Water
A pinch Salt (According to the taste)
       
Method:    
  - Add salt into the flour and mix up well.
  - Add ghee into the flour then rub them with two hands until the ghee mixes with the flour.
  - Add 2 eggs into the mixture and mix up well.
  - Add water and mix the mixture until become a consistent dough.
  - The ka'ak is formed by shape molds then coat the face of the ka'ak with the third egg to give a shining lay after baking in the oven.
  - bake the ka'ak in the oven for a half hour then served with tea.
